Method

Preparation

  1. 1

    Prepare Scallops

Rinse the fresh sea scallops under cold water and pat them dry with a paper towel. Remove any tough muscle that may still be attached to the scallops.

  2. 2

    Mise en Place

Mince the garlic and chop the parsley. Set these aside along with the butter, olive oil, lemon juice, salt, and black pepper.

Cooking

  1. 3

    Heat the Pan

In a large skillet, heat the olive oil over medium-high heat until it shimmers.

  2. 4

    Sear the Scallops

Add the scallops in a single layer, making sure not to overcrowd the pan. Sear them for about 2-3 minutes on one side until they develop a golden crust.

  3. 5

    Flip the Scallops

Carefully flip the scallops and add the butter and minced garlic to the skillet. Cook for an additional 2-3 minutes, basting the scallops with the melted garlic butter.

  4. 6

    Add Lemon Juice

Once the scallops are cooked through and opaque, remove the skillet from the heat and stir in the lemon juice, salt, and black pepper to taste.

  5. 7

    Garnish and Serve

Plate the scallops and drizzle with the garlic-butter sauce. Garnish with chopped parsley, chives, and serve with lemon wedges on the side.
