Prepare the Filling
In a large mixing bowl, combine the ground chicken, chopped cabbage, grated carrot, chopped green onions, minced garlic, minced ginger, soy sauce, sesame oil, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

Fill the Dumplings
Take a wonton wrapper and place about one tablespoon of the filling in the center. Moisten the edges of the wrapper with a little water. Fold the wrapper in half to form a triangle, pressing the edges to seal. Ensure there are no air pockets. Repeat with the remaining wrappers and filling.
Cooking the Dumplings

Fry or Steam
To fry: Heat a non-stick skillet over medium heat and add a tablespoon of oil. Place the dumplings in the skillet and fry for about 2-3 minutes on each side until golden brown. Add a few tablespoons of water to the skillet, cover, and steam for an additional 5 minutes. To steam: Place dumplings in a steamer basket lined with parchment paper and steam for about 8-10 minutes until cooked through.

Make the Ginger Sauce
In a small bowl, mix together the soy sauce, rice vinegar, grated fresh ginger, honey, and chili flakes until well combined. Adjust seasoning to taste.
