Wontons Preparation
In a bowl, combine the ground pork, shrimp, minced garlic, minced ginger, soy sauce, sesame oil, green onion, and salt. Mix well until fully combined.
Take a wonton wrapper and place about a teaspoon of the filling mixture in the center of the wrapper.
Moisten the edges of the wrapper with water, fold it in half diagonally to form a triangle, and press the edges to seal. Then, bring the two corners of the triangle together to form a wonton shape. Repeat with remaining wrappers and filling.
Soup Preparation
In a large pot, bring the chicken or vegetable broth to a boil over medium-high heat.
Add the wontons to the boiling broth. Cook for about 5-7 minutes until they float to the top and are cooked through.
Once the wontons are cooked, add the rice noodles, julienned carrot, chopped bok choy, and sliced mushrooms to the pot.
Let the soup simmer for an additional 5 minutes until the noodles and vegetables are tender.
Taste the broth and adjust seasoning if necessary. You can add more soy sauce or salt to taste.
Ladle the soup into bowls and top with chopped cilantro, green onions, and a sprinkle of roasted garlic.
