    Prepare the Shrimp

    Rinse the shrimp under cold water and pat them dry with paper towels. Ensure they are completely dry to achieve a crispy texture after frying.

    Make the Tempura Batter

    In a large mixing bowl, combine the all-purpose flour, cornstarch, and baking powder. Gradually add the ice water while stirring gently until just combined. The batter should be lumpy; do not overmix.

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can use a thermometer to check the temperature or drop a small amount of batter into the oil; it should sizzle and rise to the top.

    Fry the Shrimp

    Dip each shrimp into the tempura batter, allowing any excess to drip off. Carefully place the battered shrimp in the hot oil, a few at a time, being careful not to overcrowd the pan. Fry for about 2-3 minutes until golden brown and crispy.

    Using a slotted spoon, remove the shrimp from the oil and place them on a plate lined with paper towels to absorb excess oil.
