Fresh Rolls Preparation

Cook the Shrimp
In a pot of boiling water, add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Drain and set aside to cool.

Prepare the Rice Noodles
Soak the rice noodles in hot water for about 10 minutes until soft, then drain and rinse with cold water.

Prepare the Tofu
Cut the tofu into thin strips. Optionally, you can pan-fry the tofu in a non-stick skillet until golden brown.

Slice the Cucumbers
Cut the cucumber lengthwise, remove the seeds, and slice it into thin strips.

Assemble the Rolls
Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10 seconds until it softens. Place the wrapper on a clean surface and layer shrimp, rice noodles, tofu, bean sprouts, and cucumber in the center. Fold the sides over the filling and roll tightly from the bottom up. Repeat with remaining ingredients.

In a small bowl, combine hoisin sauce, peanut butter, water, and lime juice. Stir until smooth and well combined.
