Prepare the Ingredients

Start by chopping all the vegetables and slicing the meat into bite-sized pieces. Set aside.

Cook the Meat

In a large pot or wok, heat a tablespoon of oil over medium heat. Add the chicken (or your choice of meat) and cook until browned, about 5-7 minutes.

Add Red Curry Paste

Stir in the red curry paste and cook for an additional 2 minutes, allowing the flavors to meld with the meat.

Incorporate Coconut Milk

Pour in the coconut milk and stir well to combine with the meat and curry paste. Bring it to a gentle simmer.

Add Vegetables

Add the bamboo shoots, carrots, bell pepper, broccoli, green beans, and zucchini to the pot. Stir to combine and let it simmer for about 10 minutes, or until the vegetables are tender.

Season the Curry

Add the fish sauce and sugar to the curry. Taste and adjust seasoning if necessary. If you prefer a spicier curry, feel free to add more red curry paste.

Finish with Thai Basil

Remove the pot from heat and stir in the Thai basil leaves. Allow the residual heat to wilt the basil.
