Chicken Satay

Sweet Potatoes

Sweet & Sour Sauce

Method

Chicken Satay

  1. 1

    Marinate Chicken

Cut the chicken breast into thin strips and place them in a bowl. In another bowl, mix coconut milk, peanut butter, soy sauce, brown sugar, minced garlic, minced ginger, and lime juice. Pour the marinade over the chicken and let it marinate for at least 30 minutes.

  2. 2

    Prepare Skewers

Soak wooden skewers in water for 15 minutes to prevent burning. Then, thread the marinated chicken strips onto the skewers.

  3. 3

    Grill Satay

Preheat the grill to medium-high heat. Grill the skewers for 4-5 minutes on each side until fully cooked. Serve with sweet & sour sauce.

Sweet Potatoes

  1. 4

    Prepare Sweet Potatoes

Preheat the oven to 400°F (200°C). Wash and peel the sweet potatoes, then cut them into wedges.

  2. 5

    Season and Bake

In a bowl, toss the sweet potato wedges with olive oil, salt, and paprika. Spread them out on a baking sheet and bake for 25-30 minutes until tender and slightly crispy.

Fried Tofu

  1. 6

    Prepare Tofu

Press the firm tofu to remove excess moisture, then cut it into cubes.

  2. 7

    Coat Tofu

Dredge the tofu cubes in cornstarch until evenly coated.

  3. 8

    Fry Tofu

In a deep skillet, heat vegetable oil over medium-high heat. Fry the tofu cubes until golden brown and crispy, approximately 5-7 minutes. Remove and drain on paper towels. Sprinkle with salt.

Spring Rolls

  1. 9

    Prepare Filling

In a bowl, mix shredded cabbage, julienned carrots, and bean sprouts. Add soy sauce and toss to combine.

  2. 10

    Wrap Spring Rolls

Lay a spring roll wrapper on a flat surface, place a portion of the filling in the center, and fold the sides over to seal. Repeat with remaining wrappers and filling.

  3. 11

    Fry Spring Rolls

In a deep skillet, heat vegetable oil over medium heat. Fry the spring rolls until golden brown, about 3-4 minutes per side. Drain on paper towels.

Thai Toast

  1. 12

    Prepare Mixture

In a bowl, mix ground chicken, red curry paste, beaten egg, and chopped cilantro.

  2. 13

    Assemble Toasts

Spread the chicken mixture over each slice of bread.

  3. 14

    Fry Toasts

In a skillet, heat vegetable oil over medium heat. Fry the prepared bread slices for 2-3 minutes on each side until golden and crispy. Drain on paper towels.

Sweet & Sour Sauce

  1. 15

    Mix Sauce

In a small bowl, combine ketchup, rice vinegar, brown sugar, soy sauce, and pineapple juice. Whisk together until smooth.

  2. 16

    Serve

Serve the sweet & sour sauce alongside the chicken satay, fried tofu, spring rolls, and Thai toast.
