Prepare the Ingredients
Gather all the ingredients and prepare them by dicing the tomatoes, slicing the mushrooms, chopping the lemongrass, and cutting the galanga into thin slices.

Simmer the Coconut Milk
In a large pot, pour in the coconut milk and heat it over medium heat until it starts to simmer.

Add the Meat
Once the coconut milk is simmering, add the diced chicken breast (or your choice of meat) into the pot and stir well.

Incorporate Aromatics
Add the sliced galanga, chopped lemongrass, and kaffir lime leaves to the pot. Let them infuse their flavors into the soup for about 5 minutes.

Add Vegetables
Incorporate the diced tomatoes and sliced mushrooms into the pot and continue to simmer for another 5 minutes.

Season the Soup
Stir in the roasted chili paste and fish sauce, adjusting the seasoning to taste. Allow the soup to simmer for an additional 5-10 minutes until the meat is cooked through.

Ladle the hot coconut soup into bowls and garnish with fresh cilantro. Serve with lime wedges on the side for added flavor.
