    Prepare the Marinade

    In a bowl, combine coconut milk, soy sauce, peanut butter, brown sugar, lime juice, minced garlic, grated ginger, and salt. Whisk together until smooth.

    Marinate the Chicken

    Cut the boneless chicken breast into strips. Place the chicken strips in a zip-lock bag or a shallow dish and pour the marinade over them. Seal the bag or cover the dish, and refrigerate for at least 1 hour (or up to overnight for best flavor).

    Prepare Skewers

    If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill. Preheat the grill to medium-high heat.

    Skewer the Chicken

    Remove the marinated chicken from the refrigerator. Thread the chicken strips onto the soaked skewers, making sure to leave a little space between each piece for even cooking.

    Grill the Chicken

    Place the skewers on the preheated grill. Cook for about 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

    Remove the skewers from the grill and let them rest for a few minutes. Serve warm with Thai cucumber sauce for dipping.
