    Prepare the Vegetables

    Peel and chop the carrots and potatoes into bite-sized pieces. Dice the onion.

    Sauté the Onions

    In a large pot, heat the vegetable oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

    Add the Curry Powder

    Stir in the yellow curry powder and cook for another minute, allowing the spices to become fragrant.

    Add the chopped carrots and potatoes to the pot and stir well to coat them with the curry mixture.

    Pour in the coconut milk and water. Stir to combine and bring the mixture to a gentle boil.
