Make the Filling
In a mixing bowl, combine ground chicken, minced garlic, minced ginger, soy sauce, sesame oil, salt, and pepper. Mix well until combined.

Assemble the Wontons
Place a teaspoon of the chicken filling in the center of each wonton wrapper. Moisten the edges with water and fold the wrapper over to seal, pinching the edges to ensure they are well sealed.

Prepare the Broth
In a large pot, bring the chicken broth to a simmer. Add the chopped bok choy and cook for about 2-3 minutes until it begins to soften.

Cook the Wontons
Carefully add the wontons to the simmering broth. Cook for 5-7 minutes or until the wontons float and are cooked through.

Serve
Ladle the soup into bowls, garnishing with chopped scallions. Serve hot.
