    Prepare the Trout

    Clean the whole trout and pat them dry. Season the inside and outside with salt and black pepper.

    Prepare the Vegetables

    Julienne the carrots and bell peppers. Finely chop the fresh chilies and garlic cloves.

    Heat the Oil

    In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Trout

    Carefully place the seasoned trout into the hot oil. Fry for about 6-8 minutes on each side until golden brown and cooked through.

    Make the Topping

    In a small pan, briefly sauté the chopped garlic and chilies until fragrant. Add the julienned carrots and bell peppers, and stir-fry for 2-3 minutes.

    Assemble the Dish

    Remove the trout from the oil and place them on a serving platter. Top with the sautéed vegetables and drizzle spicy garlic sauce over the fish. Garnish with crispy basil leaves.
