    Prepare the Vegetables

    Wash and slice all the vegetables: bamboo shoots, bell pepper, onion, and carrot. Mince the garlic and chop the scallions.

    Heat the Pan

    In a large skillet or wok, heat 2 tablespoons of oil over medium-high heat.

    Stir-fry the Aromatics

    Add the minced garlic and sliced onion to the hot oil. Stir-fry for about 1-2 minutes until fragrant.

    Add the Vegetables

    Add the sliced bamboo shoots, bell pepper, and carrot to the pan. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.

    Add the Spicy Sauce

    Stir in 2 tablespoons of chili paste sauce and mix well to coat the vegetables. Cook for an additional 2-3 minutes.

    Finish with Scallions

    Remove from heat and stir in the chopped scallions. Adjust seasoning if needed.

    Serve hot as a side dish or over rice as a main dish.
