Cooking Instructions

  1. 1

    Marinate the Salmon

In a bowl, combine coconut milk, chopped basil, and thinly sliced lemongrass. Add the salmon fillets and marinate for at least 30 minutes.

  2. 2

    Prepare the Banana Leaves

Soften the banana leaves by passing them over an open flame for a few seconds or blanching them in boiling water. This makes them pliable for wrapping.

  3. 3

    Wrap the Salmon

Place each marinated salmon fillet in the center of a banana leaf. Fold the leaves over the fillet to completely enclose it, securing with kitchen twine if necessary.

  4. 4

    Grill the Salmon

Preheat the grill to medium-high heat. Place the wrapped salmon on the grill and cook for about 15-20 minutes, turning once, until the salmon is cooked through.

  5. 5

    Serve

Carefully unwrap the banana leaves and serve the salmon with a spicy homemade sauce on the side.
