Prepare the Filling
In a mixing bowl, combine the imitation crab meat, cream cheese, mashed potato, grated carrots, chopped scallions, curry powder, salt, and black pepper. Mix until well combined.

Assemble the Puff Crabs
Take a wonton skin and place about 1 tablespoon of the crab filling in the center. Wet the edges of the wonton skin with water, fold it over to create a triangle, and press to seal. Repeat with the remaining wonton skins and filling.

Deep Fry the Puff Crabs
Heat oil in a deep fryer or a heavy pan to 180°C (350°F). Fry the assembled puff crabs in batches until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.

Serve
Serve the puff crabs hot with sweet chili sauce for dipping.
