    Prepare the Noodles

    Soak the rice noodles in hot water for about 20-30 minutes or until they are soft. Drain and set aside.

    Cook the Eggs

    In a large pan or wok, heat 1 tablespoon of vegetable oil over medium heat. Crack the eggs into the pan and scramble until just set. Remove from the pan and set aside.

    Sauté Aromatics

    In the same pan, add another tablespoon of vegetable oil. Add minced garlic and ground sweet radish, sauté for about 1 minute until fragrant.

    Combine Ingredients

    Add the soaked rice noodles to the pan along with the soy sauce and cooked eggs. Toss everything together, cooking for another 2-3 minutes.

    Add Vegetables

    Stir in the bean sprouts and sliced scallions, cooking for an additional 1-2 minutes until the vegetables are tender but still crisp.

    Serve

    Transfer the Pad Thai to serving plates, garnish with ground peanuts and serve with lime wedges on the side.
