Start by cooking the rice and then marinate it with curry powder. Once marinated, fry it in a pan until crispy. Set aside.

Cook the Pork
In a large skillet, cook the ground pork over medium heat until browned and fully cooked. Drain excess fat if necessary.

Mix the Ingredients
In a large mixing bowl, combine the cooked ground pork, fried marinated curry rice, minced ginger, chopped red onion, herbs, grated carrot, sliced scallions, crushed peanuts, chopped chilies, and lime juice. Mix well to combine all ingredients.

Serve the mixture in a bowl, garnished with additional herbs if desired, and alongside cabbage leaves, cucumber slices, and lettuce leaves for wrapping.
