    Prepare the Ingredients

    Wash and chop all vegetables: bell peppers, onion, carrots, mushrooms, and green onions. Mince the garlic.

    Make the Garlic Sauce

    In a small bowl, mix the soy sauce, sesame oil, cornstarch, and water until smooth. Set aside.

    Stir-fry the Vegetables

    Heat a large pan or wok over medium-high heat. Add a splash of oil, then add the garlic and sauté for about 30 seconds until fragrant.

    Add Vegetables

    Add the chopped bell peppers, onion, carrots, mushrooms, and green onions to the pan. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.

    Combine and Serve

    Pour the garlic sauce over the vegetables, stirring well to coat. Cook for an additional 2-3 minutes until the sauce thickens. Season with pepper and salt to taste. Serve hot.
