    Prepare the Vegetables

    Wash and chop the bell peppers, onion, carrots, and mushrooms into bite-sized pieces. Mince the garlic and slice the scallions.

    Stir-fry the Vegetables

    In a large wok or skillet, heat 2 tablespoons of oil over medium-high heat. Add the minced garlic and sauté for 30 seconds until fragrant.

    Add the Vegetables

    Add the bell peppers, onion, carrots, mushrooms, and baby corn to the wok. Stir-fry for about 5-7 minutes or until the vegetables are tender-crisp.

    Add Scallions and Peanuts

    Stir in the sliced scallions and chopped peanuts. Cook for an additional 2-3 minutes, stirring frequently.
