Prepare the Filling
In a large bowl, combine ground chicken, chopped cabbage, grated carrot, green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are fully incorporated.

Fill the Gyoza Wrappers
Take a gyoza wrapper and place a small spoonful of the filling mixture in the center. Wet the edges of the wrapper with water, fold it in half, and pinch the edges to seal. Make pleats for a decorative finish, if desired. Repeat until all filling is used.

Cooking the Gyoza
For steaming: Place gyoza in a steamer basket lined with parchment paper and steam for about 15 minutes until fully cooked. For frying: Heat oil in a pan over medium heat. Place gyoza in the pan and fry until the bottoms are golden brown. Then add a small amount of water to the pan, cover, and steam for 5-7 minutes.

Serving
Serve gyoza hot, topped with minced garlic and accompanied by sweet chili sauce for dipping.
