Prepare the Shrimp
Peel and devein the shrimp, leaving the tails intact. Pat them dry with a paper towel.

Make the Batter
In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder. In another bowl, beat the eggs and mix them with the water. Slowly add the egg mixture to the dry ingredients, whisking until smooth.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Shrimp
Dip each shrimp into the batter, allowing excess to drip off. Carefully place the battered shrimp into the hot oil, frying in batches to avoid overcrowding. Fry for 2-3 minutes or until golden brown and crispy.

Drain and Serve
Using a slotted spoon, transfer the fried shrimp to a plate lined with paper towels to drain excess oil. Serve hot with pickles and sweet chili sauce.
