    Prepare the Ingredients

    Soak the thick rice noodles in warm water for about 30 minutes or until softened. Drain and set aside.

    Stir-Fry the Aromatics

    In a large wok or skillet, heat the vegetable oil over medium-high heat. Add minced garlic and chopped chilies, and stir-fry for about 30 seconds until fragrant.

    Add Vegetables

    Add sliced onions, bell peppers, broccoli, carrots, and bamboo shoots to the wok. Stir-fry for about 3-4 minutes until the vegetables are slightly tender.

    Cook the Eggs

    Push the vegetables to one side of the wok. Crack the eggs into the empty space, scramble them until cooked, then mix with the vegetables.

    Combine Noodles and Sauce

    Add the soaked rice noodles to the wok. Pour in the soy sauce and oyster sauce, tossing everything together for about 2-3 minutes until the noodles are heated through.

    Finish with Herbs

    Stir in the chopped scallions and fresh basil. Cook for an additional minute, then remove from heat.

    Serve the drunken noodles hot, garnished with additional basil or chilies if desired.
