Marinate the Chicken
In a bowl, combine coconut milk, soy sauce, brown sugar, ground coriander, ground cumin, minced garlic, grated ginger, lime juice, salt, and pepper. Add the chicken breast (cut into strips) and marinate for at least 30 minutes in the refrigerator.

Prepare the Peanut Sauce
In a small bowl, mix peanut butter, water, soy sauce, and a pinch of salt until smooth. Adjust the consistency with more water if necessary.

Assemble the Skewers
Thread the marinated chicken strips onto skewers. You can soak the skewers in water for 30 minutes prior to prevent burning if using wooden skewers.

Grill the Chicken
Preheat a grill or grill pan over medium heat. Grill the skewers for about 5-7 minutes on each side, or until the chicken is cooked through and has grill marks.

Serve
Plate the chicken satay skewers with the peanut sauce for dipping and the cucumber salad on the side. Enjoy!
