    Prepare the Trout

    Rinse the whole boneless trout under cold water and pat dry with paper towels. Season the fish with salt and black pepper.

    Coat the Trout

    In a mixing bowl, combine all-purpose flour and cornstarch. Dredge each trout in the flour mixture, ensuring an even coat.

    Heat the Oil

    In a large, deep skillet or fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Trout

    Carefully place the coated trout in the hot oil. Fry for about 5-7 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.

    Prepare the Salad

    While the trout is frying, julienne the green apple, onion, carrot, and scallions. Place them in a bowl with the chopped mint and basil.

    Make the Dressing

    Squeeze the juice of 2 limes over the salad mixture and toss to combine. Season with salt and pepper to taste.
