Pupusa Dough

Prepare the Dough
In a large mixing bowl, combine masa harina, salt, and water. Mix until a smooth dough forms. If the dough is too dry, add more water, one tablespoon at a time.

Divide the Dough
Divide the dough into equal portions, about the size of a golf ball. Cover with a damp cloth to prevent drying.

Prepare Fillings
Choose any three fillings from cheese, refried beans, chicharrón, spinach, and mushrooms. Make sure they are pre-cooked and chopped if necessary.
Curtido

Make the Curtido
In a medium bowl, mix shredded cabbage, shredded carrots, white vinegar, water, oregano, and salt. Let sit for at least 30 minutes to allow flavors to meld.
Salsa

Prepare the Salsa
In a separate bowl, combine diced tomatoes, chopped onion, chopped cilantro, minced jalapeño, and lime juice. Mix well and set aside.
Assembling Pupusas

Form the Pupusas
Take a portion of dough and flatten it into a disc. Place your chosen filling in the center, then fold the dough over the filling to seal it. Flatten gently to form a thick disc.

Cook the Pupusas
Heat a non-stick skillet or griddle over medium heat. Cook each pupusa for about 4-5 minutes on each side or until golden and slightly crispy.
