Main Ingredient

Method

Catfish Preparation

  1. 1

    Soak Catfish

In a large bowl, pour the buttermilk over the catfish fillets, ensuring they are fully submerged. Let them soak for at least 30 minutes to tenderize and add flavor.

  2. 2

    Prepare Coating

In a separate bowl, mix the flour, cornmeal, salt, black pepper, and cayenne pepper until well combined.

  3. 3

    Coat Catfish

Remove each fillet from the buttermilk, allowing excess to drip off. Dredge the fillets in the flour mixture, making sure they are evenly coated.

  4. 4

    Fry Catfish

In a large skillet, heat the oil over medium-high heat. Once the oil is hot, carefully place the coated catfish fillets in the skillet. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and place on a paper towel to drain excess oil.

Coleslaw Preparation

  1. 5

    Combine Ingredients

In a large bowl, combine the shredded cabbage and shredded carrots. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth.

  2. 6

    Mix Coleslaw

Pour the dressing over the cabbage and carrot mixture. Toss well to combine. Refrigerate for at least 15 minutes before serving to allow flavors to meld.

French Fries Preparation

  1. 7

    Prepare Potatoes

Rinse the cut potatoes in cold water to remove excess starch. Pat them dry with a paper towel.

  2. 8

    Fry Potatoes

In a separate large skillet or deep fryer, heat the oil over medium-high heat. Once the oil is hot, carefully add the potatoes in batches. Fry for about 5-7 minutes or until golden brown and crispy. Remove and drain on paper towels. Season with salt while still hot.
