Preparation of Catfish Fillets

Marinate the Catfish
In a large bowl, pour buttermilk over the catfish fillets. Ensure that the fillets are fully immersed. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

Prepare the Breading
In a separate bowl, mix together cornmeal, all-purpose flour, paprika, garlic powder, onion powder, salt, and black pepper. This will be your breading mixture.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Cooking the Catfish

Bread the Fillets
Remove the catfish from the buttermilk, allowing excess to drip off. Dredge each fillet in the breading mixture, pressing lightly to adhere. Shake off any excess breading.

Fry the Fillets
Carefully place the breaded catfish fillets in the hot oil. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. Use a slotted spoon to remove them and place on a paper towel-lined plate to drain excess oil.

Cook the French Fries
While the catfish is frying, cook the French fries according to package instructions or until golden and crispy. Drain on paper towels.

In a large bowl, combine coleslaw mix with your choice of dressing. Toss well to combine and let sit for a few minutes to allow flavors to blend.

On each plate, serve two pieces of hand-breaded catfish fillets alongside a portion of French fries and coleslaw. Enjoy your meal!
