Prepare the Chicken
Cut the chicken breast into strips, about 1 inch wide.

Bread the Chicken
Dip each chicken strip into the flour, shaking off the excess, then into the beaten eggs, and finally coat with the bread crumb mixture. Place on a plate.

Heat the Oil
In a large frying pan, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chicken
Carefully add the breaded chicken strips to the hot oil in batches. Fry for 4-5 minutes on each side or until golden brown and cooked through. Remove and place on paper towels to drain excess oil.

Prepare the Potatoes
Wash and peel the potatoes. Cut them into thin strips, about 1/4 inch thick.

Soak the Fries
Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

Heat the Oil for Fries
In a separate frying pan, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the Fries
Drain the soaked fries and pat them dry with paper towels. Carefully add them to the hot oil in batches and fry for about 5-7 minutes until golden and crispy. Remove and place on paper towels, then season with salt immediately.
