    Cook the Meat

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.

    Add the Beef

    Add the ground beef to the skillet. Cook until browned, breaking it up with a spatula, about 6-8 minutes.

    Season the Mixture

    Stir in the cooked shredded chicken, cumin, chili powder, and salt. Mix well to combine and cook for an additional 2-3 minutes until heated through. Remove from heat and set aside.

Enchilada Assembly

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Prepare the Tortillas

    In a separate saucepan, warm the enchilada sauce over low heat. This will help make the tortillas pliable.

    Fill the Tortillas

    Take a corn tortilla and dip it into the enchilada sauce, coating both sides. Place about 1/4 cup of the meat filling in the center of the tortilla, then sprinkle with a little shredded cheese.

    Roll the Enchiladas

    Roll the tortilla tightly around the filling and place it seam-side down in a greased 9x13 inch baking dish. Repeat with the remaining tortillas and filling.

    Top with Sauce and Cheese

    Once all the enchiladas are in the dish, pour the remaining enchilada sauce over the top and sprinkle with the remaining shredded cheese.

    Bake the Enchiladas

    Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.

    Once baked, remove from the oven, allow to cool for a few minutes, then garnish with chopped cilantro and serve with sour cream.
