In a cocktail shaker, combine the Eastern Kille American dry gin, fresh lemon juice, and lavender syrup.

Fill the cocktail shaker with ice and shake vigorously for about 15-20 seconds until well chilled.

Use a fine mesh strainer to strain the mixture into a chilled champagne flute or coupe glass.

Carefully pour the sparkling wine over the strained gin mixture in the glass.
