Method
Pasta Preparation
- 1
Cook the Bucatini
Bring a large pot of salted water to a boil. Add the bucatini pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.
- 2
Incorporate Squid Ink
In a large mixing bowl, combine the drained bucatini with squid ink. Toss gently until the pasta is evenly coated with the ink. Set aside.
Crab Sofrito
- 3
Prepare Sofrito
In a large skillet, heat olive oil over medium heat. Add the chopped red bell pepper, minced garlic, and finely chopped shallot. Sauté for about 5 minutes, or until the vegetables are softened and fragrant.
- 4
Add Crab Meat
Gently fold in the lump crab meat, salt, black pepper, and red pepper flakes. Cook for an additional 3-4 minutes, being careful not to break up the crab too much.
- 5
Combine with Pasta
Add the squid ink bucatini to the skillet with the crab sofrito. Toss gently to combine, adding reserved pasta water as needed to create a silky sauce.
Garnishing
- 6
Finish the Dish
Remove the skillet from heat. Stir in the lemon zest and juice, and chopped parsley. Adjust seasoning if necessary.
- 7
Serve
Plate the squid ink bucatini and top with toasted breadcrumbs. Garnish with additional parsley if desired.
