Pasta Preparation

Boil the Rigatoni
In a large pot, bring salted water to a boil. Add the rigatoni and cook according to package instructions until al dente, usually about 10-12 minutes. Once done, drain and set aside.

Sear the Scallops
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the scallops with salt and black pepper. Once the oil is hot, add the scallops to the skillet, making sure not to overcrowd the pan. Sear for about 2-3 minutes on each side until golden brown and cooked through. Remove from heat and set aside.

Combine Sauce Ingredients
In the same skillet used for the scallops, add the vodka sauce and bring to a simmer. Stir in the sun-dried tomatoes and fresh basil. Allow to simmer for about 5 minutes to combine the flavors.

Combine Everything
Add the drained rigatoni to the skillet with the sauce and toss to coat the pasta. Gently fold in the ricotta cheese, allowing it to melt slightly into the sauce. Finally, add the seared scallops on top. Garnish with additional basil if desired.
