    Prepare the Chicken

    Preheat your oven to 425°F (220°C). Rinse the free-range chicken under cold water and pat it dry with paper towels. Place it on a cutting board.

    Season the Chicken

    In a small bowl, mix together the olive oil, minced garlic (press or chop finely), salt, black pepper, and chopped rosemary. Rub this mixture all over the chicken, including under the skin and inside the cavity.

    Add Lemon

    Cut one lemon into quarters and place it inside the cavity of the chicken along with a few sprigs of rosemary.

Vegetable Preparation

    Prepare the Vegetables

    Peel and chop the carrots and potatoes into large chunks. Cut the onion into wedges.

    Arrange Vegetables

    In a large roasting pan, spread the chopped vegetables evenly. Drizzle them with olive oil, salt, and pepper, and toss to coat.

    Combine Chicken and Vegetables

    Place the seasoned chicken on top of the arranged vegetables in the roasting pan.

    Roast in the Oven

    Roast in the preheated oven for about 1 hour and 15 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the juices run clear when pierced.

    Rest the Chicken

    Once done, remove the chicken from the oven and let it rest for about 10 minutes before carving.
