Preparing Mussels

Clean the Mussels
Rinse the fresh mussels under cold water, scrubbing the shells to remove any debris. Discard any mussels that are open and do not close when tapped.

Add Wine and Saffron
Pour in the white wine and add a pinch of saffron threads. Bring the mixture to a simmer.

Cook Mussels
Add the cleaned mussels to the pot, cover with a lid, and cook for 5-7 minutes or until the mussels open. Discard any mussels that remain closed.

Making Sofrito

Prepare Vegetables
Dice the red bell pepper and tomato. Set aside.

Cook Sofrito
In a separate skillet, heat olive oil over medium heat. Add the diced red bell pepper and sauté for about 3-4 minutes until softened. Add the diced tomato and continue to cook for another 3-4 minutes.

To Serve

Prepare Milk Bread
Toast the slices of milk bread until golden brown.

Plate the Dish
Serve the mussels in a large bowl, topped with the sofrito. Serve with the toasted milk bread on the side for dipping.
