Prep the Meat
Trim excess fat from the beef brisket and pork shoulder, then cut them into large chunks.

Mix the Spice Rub
In a bowl, combine the salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper. Mix well.

Season the Meat
Rub the spice mixture all over the chunks of meat, ensuring they are well coated. Let them sit for at least 30 minutes.
Cooking

Sear the Meat
In a large skillet or Dutch oven over medium-high heat, sear the meat chunks on all sides until browned. Remove from the skillet and set aside.

Sauté Vegetables
In the same skillet, add chopped onion and minced garlic cloves. Cook until the onion becomes translucent.

Add Liquids
Pour in the apple cider vinegar and beef broth. Stir well, scraping any browned bits from the bottom of the skillet.

Combine Meat and Vegetables
Return the seared meat to the skillet, along with chopped bell peppers. Stir to combine.

Slow Cook
Cover and let the mixture simmer on low heat for 3-4 hours or until the meat is tender and easily shreds with a fork.

Prepare the Buns
Lightly toast the burger buns on a grill or in the oven.

Assemble the Sandwich
Layer the shredded meat on the bottom half of the toasted buns. Top with coleslaw and pickles. Place the top half of the bun on top.
