Method
Dressing
- 1
Prepare the Dressing
In a food processor, combine garlic cloves, anchovy fillets, Dijon mustard, Worcestershire sauce, and lemon juice. Blend until smooth.
- 2
Emulsify the Dressing
With the processor running, slowly drizzle in the olive oil until the dressing is well combined and creamy. Season with salt and black pepper to taste. Stir in Parmesan cheese and set aside.
Croutons
- 3
Prepare the Croutons
Preheat your oven to 375°F (190°C). Cut the bread into small cubes and place them in a mixing bowl.
- 4
Season and Bake the Croutons
Drizzle olive oil over the bread cubes, add garlic powder and salt, and toss until evenly coated. Spread the cubes on a baking sheet and bake for about 10-15 minutes, or until golden brown and crispy.
Salad
- 5
Prepare the Kale
Wash and thoroughly dry the kale. Remove the stems and tear the leaves into bite-sized pieces.
- 6
Assemble the Salad
In a large bowl, combine the kale with the Caesar dressing and toss until the leaves are well coated. Add shaved Parmesan cheese and toss gently.
- 7
Finish with Croutons
Top the salad with the homemade croutons just before serving to ensure they remain crunchy.
