Dough Preparation

Activate Yeast
In a bowl, combine warm water and active dry yeast. Stir lightly and let it sit for about 5-10 minutes until frothy.

Make Dough
In a large mixing bowl, combine all-purpose flour and salt. Once the yeast is activated, add it along with olive oil to the flour mixture. Stir until a dough forms.

Knead Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

Let Dough Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.

Preheat Oven
Preheat your wood-fired oven to about 500°F (260°C) or according to your oven's instructions for pizza.

Shape Dough
Once risen, punch down the dough and divide it into two equal portions. Roll out each portion into a round shape on a floured surface.

Add Sauce and Toppings
Spread tomato sauce evenly over each pizza base, then sprinkle with shredded mozzarella cheese. Add pepperoni, bell peppers, and onions as desired.

Bake Pizza
Transfer the pizzas to the oven and bake for about 10-12 minutes or until the crust is golden brown and the cheese is bubbly.

Remove from the oven, drizzle with olive oil, and top with fresh basil leaves before slicing and serving.
