Dough Preparation

Activate Yeast
In a small bowl, combine warm water (about 110°F) and sugar. Sprinkle the active dry yeast over the water and let it sit for about 5-10 minutes until frothy.

Mix Dough
In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the frothy yeast mixture and olive oil. Mix until a dough forms.

Knead Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

Let Dough Rise
Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until it has doubled in size.

Preheat Oven
Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat up.

Shape Flatbread
Once the dough has risen, punch it down and divide it into 4 equal portions. Roll each portion into a flat circle or oval about 1/4 inch thick.

Prepare Toppings
While the oven is preheating, prepare your toppings. Halve the cherry tomatoes, thinly slice the red onion, and wash the basil leaves.

Top Flatbread
Place the flatbread on a baking sheet or pizza peel (if using a pizza stone). Top each flatbread with mozzarella cheese, cherry tomatoes, red onion, and fresh basil.

Bake Flatbread
Bake the flatbreads in the preheated oven for about 10-12 minutes or until the edges are golden and the cheese is melted and bubbly.

Remove from the oven, drizzle with balsamic glaze, and let cool for a minute before slicing. Serve warm.
