Prepare the English Muffins
Slice the English muffins in half and toast them until golden brown.

Cook the Ham
In a skillet over medium heat, warm the Canadian bacon or ham slices for about 2-3 minutes on each side until heated through.

Poach the Eggs
Bring a pot of water to a gentle simmer. Crack each egg into a small bowl and gently slide it into the water. Poach the eggs for about 3-4 minutes until the whites are set but the yolks are still runny. Remove with a slotted spoon and drain on a paper towel.

Assemble the Eggs Benedict
On each toasted half of the English muffin, layer a slice of warm ham, followed by a poached egg. Repeat with all muffins.
Hollandaise Sauce

Melt the Butter
In a small saucepan, melt the unsalted butter over low heat. Remove from heat and let cool slightly.

Whisk Egg Yolks
In a medium bowl, whisk together the egg yolks, lemon juice, and salt until the mixture is pale and thick.

Season the Sauce
Add a pinch of cayenne pepper to the hollandaise sauce and mix well.
