Crust Preparation

    Mix the dry ingredients

    In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Mix well.

    Cut in the butter

    Add the unsalted butter, cubed, to the dry ingredients. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

    Add ice water

    Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. Do not overwork the dough.

    Chill the dough

    Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Filling Preparation

    Prepare the spinach

    In a skillet over medium heat, lightly sauté the chopped spinach until wilted. Remove from heat and let cool.

    Mix the filling ingredients

    In a mixing bowl, whisk together the eggs, heavy cream, black pepper, and nutmeg. Stir in the sautéed spinach and shredded Holland cheese.

Assembly and Baking

    On a floured surface, roll out the chilled dough to fit a 9-inch pie dish. Place the rolled-out dough into the dish and trim any excess.
