Chocolate Mousse Preparation

    Melt Chocolate and Butter

    In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler) and stir until the chocolate and butter are completely melted and smooth. Remove from heat and let it cool slightly.

    Mix Egg Yolks and Sugar

    In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and creamy. Gradually stir in the melted chocolate mixture until well combined.

    Whip Heavy Cream

    In a large mixing bowl, whip the heavy cream with vanilla extract and a pinch of salt until stiff peaks form. Be careful not to over-whip.

    Fold in Cream

    Gently fold the whipped cream into the chocolate mixture in three additions, being careful not to deflate the whipped cream. Mix until just combined.

    Chill Mousse

    Divide the mousse into serving dishes or glasses. Cover with plastic wrap and refrigerate for at least 2 hours, or until set.

    Prepare Whipped Cream

    In a mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Whip until soft peaks form.

    Serve

    Once the mousse is set, remove from the refrigerator and top each mousse with a dollop of whipped cream. Optionally, garnish with chocolate shavings or berries.
