Method
Chicken Caesar Wrap Preparation
Cook the Chicken
In a skillet over medium heat, cook the chicken breast until golden brown and fully cooked, about 6-7 minutes per side. Ensure the internal temperature reaches 165°F (75°C). Once cooked, remove from heat and let it rest for a few minutes before slicing.
Prepare the Wrap
In a large mixing bowl, combine the sliced chicken, Caesar dressing, chopped kale, garlic breadcrumbs, and grated Parmesan cheese. Toss until everything is well coated.
Assemble the Wrap
Lay a tortilla wrap flat on a clean surface. Spoon an appropriate amount of the chicken Caesar mixture onto the center of the wrap. Add a few slices of pickled red onion on top. Fold the sides of the wrap inwards and roll it up tightly from the bottom to the top. Repeat for the remaining wraps.
Potato Chips or Breakfast Potatoes Preparation
Prepare the Potatoes
If making breakfast potatoes, preheat your oven to 425°F (220°C). Cut the potatoes into small cubes, about 1-inch in size. Place them in a large bowl.
Season and Bake
Drizzle the olive oil over the cubed potatoes, then sprinkle with salt and pepper. Toss until they are evenly coated. Spread the potatoes out on a baking sheet in a single layer and bake for 25-30 minutes, turning halfway through, until golden and crispy.
Serve
Serve the chicken Caesar wraps alongside the baked breakfast potatoes or Great Lakes potato chips for a delightful meal.
