Preparation of Salmon

Preheat the Oven
Preheat your oven to 375°F (190°C).

Prepare the Salmon
Place the salmon fillets on a baking tray lined with parchment paper. Drizzle olive oil over the fillets and season with salt and black pepper. Squeeze the juice of half a lemon over the top of each fillet.
Cooking the Vegetables

Prepare the Vegetables
Wash and trim the asparagus. Peel and cut the carrots into sticks. Slice the zucchini into half-moons.

Roast the Vegetables
Arrange the vegetables around the salmon on the baking tray. Drizzle with a little olive oil and season with salt and pepper. Toss to coat evenly.
Baking

Bake the Dish
Place the baking tray in the preheated oven and bake for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.
Making Lemon Butter Sauce

Melt Butter
In a small saucepan over medium heat, melt the stick of butter.

Add Garlic and Parsley
Once melted, add minced garlic and cook for 1-2 minutes until fragrant. Remove from heat and stir in fresh parsley and lemon juice.

Garnish with lemon wedges and additional fresh parsley if desired.
