Split the vanilla bean in half lengthwise and scrape out the seeds. Set aside the seeds and the pod.

Season the Scallops
Pat the scallops dry with paper towels. Season both sides with salt and black pepper.

In a large skillet, heat the olive oil over medium-high heat until shimmering.

Add Butter and Vanilla
Once the scallops are cooked, reduce the heat to medium. Add the unsalted butter, vanilla bean seeds, and the pod to the pan. Baste the scallops with the melted butter for another minute.

Finish and Serve
Remove the scallops from the pan and place on a serving plate. Drizzle with the vanilla-infused butter and sprinkle with fresh parsley before serving.
