Cooking Instructions

  1. 1

    Prepare the Beef Tenderloin

Preheat the grill to high heat. Season the beef tenderloin with olive oil, red chile powder, salt, and black pepper. Let it marinate for 30 minutes.

  2. 2

    Grill the Beef

Place the marinated beef tenderloin on the grill. Grill for about 5-7 minutes on each side for medium-rare, or to your desired doneness. Remove from grill and let it rest for 10 minutes.

  3. 3

    Prepare the Duchess Potatoes

While the beef rests, prepare the duchess potatoes. Boil the potatoes until tender, then mash with butter, salt, and pepper. Pipe the mixture into decorative shapes and bake at 400°F (200°C) for 15-20 minutes until golden.

  4. 4

Make the Green Peppercorn-Foie Gras Sauce

In a saucepan, melt the foie gras with butter over low heat. Add heavy cream and green peppercorns, stirring until the sauce thickens slightly. Adjust seasoning with salt and pepper.

  5. 5

    Serve

Slice the beef tenderloin and serve it alongside the duchess potatoes. Drizzle the green peppercorn-foie gras sauce over the beef.
