    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thin shoestring fries, about 1/8 inch thick.

    Soak the Fries

    Place the cut fries in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a large pot, heat the vegetable oil to 350°F (175°C). Use a deep-fry thermometer to monitor the temperature.

    Fry the Potatoes

    Drain and dry the soaked fries thoroughly. Fry them in batches, cooking for about 3-4 minutes until they are golden brown and crispy. Remove using a slotted spoon and drain on paper towels.

    Season the Fries

    While the fries are still hot, drizzle with black truffle oil and sprinkle with salt and grated Parmesan cheese. Toss to combine.
