    Prepare the Brussels Sprouts

    Preheat your oven to 400°F (200°C). Trim the ends of the Brussels sprouts and cut them in half. Toss them with olive oil, salt, and pepper. Spread them evenly on a baking sheet.

    Roast the Brussels Sprouts

    Roast the Brussels sprouts in the preheated oven for 20-25 minutes, or until they are golden brown and crispy on the edges, stirring halfway through.

    Make the Citrus Butter

    In a small saucepan, melt the butter over medium heat. Add minced garlic and sauté for about 1 minute. Stir in the orange juice and lemon juice. Allow to simmer for 2-3 minutes until slightly thickened. Remove from heat.

    Cook the Striped Bass

    In a skillet, heat a bit of olive oil over medium-high heat. Season the striped bass fillets with salt and pepper. Place the fillets skin-side down and cook for about 4-5 minutes on each side until the fish is cooked through and flakes easily.

    Serve

    Plate the roasted Brussels sprouts, place the striped bass fillets on top, and drizzle with citrus butter. Garnish with crispy fried onions.
