Turkey

House Cranberry Sauce

Method

Turkey Preparation

  1. 1

    Prepare the Turkey

Preheat your oven to 325°F (165°C). Remove the turkey from the refrigerator and let it sit at room temperature for about 30 minutes. Pat it dry with paper towels. Rub the turkey all over with olive oil, then season generously with salt, pepper, rosemary, thyme, and minced garlic.

  2. 2

    Roast the Turkey

Place the turkey breast side up on a roasting rack in a large roasting pan. Roast the turkey in the preheated oven for about 3 to 4 hours, or until the internal temperature reaches 165°F (74°C). Baste the turkey every 30 minutes with its own juices.

  3. 3

    Rest the Turkey

Remove the turkey from the oven and let it rest for at least 20-30 minutes before carving.

Brown Gravy Preparation

  1. 4

    Make the Gravy

In a saucepan, combine the turkey drippings with flour over medium heat. Whisk until smooth and cook for about 2 minutes. Gradually add chicken broth while whisking to avoid lumps. Cook until thickened, about 5-7 minutes. Season with salt and pepper to taste.

Cranberry Sauce Preparation

  1. 5

    Prepare the Cranberry Sauce

In a saucepan, combine fresh cranberries, sugar, water, orange zest, and the cinnamon stick. Bring to a boil, then reduce the heat and simmer for about 10-15 minutes until the cranberries burst and the sauce thickens. Remove from heat and let cool.
