Prepare the Pork
Season the pork loin chops with salt and pepper. Dredge each chop in flour, dip in beaten eggs, and then coat with breadcrumbs.

Cook the Pork
Heat olive oil in a large skillet over medium-high heat. Fry the breaded pork chops for about 4-5 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

Make the Buerre Blanc
In a small saucepan, melt the butter over medium heat. Add lemon juice and whisk until emulsified. Keep warm.

Assemble the Salad
In a large bowl, combine arugula, marinated tomatoes, sliced pink lady apple, and chopped celery. Toss gently.

Plate the salad alongside the pork chop, drizzle with buerre blanc, and garnish with shaved parmesan and charred lemon.
