Crust Preparation

    Make the Crust

    In a large bowl, mix flour, sugar, and salt. Cut in butter until mixture resembles coarse crumbs. Stir in ice water, a tablespoon at a time, until dough forms. Wrap in plastic wrap and refrigerate for at least 30 minutes.

Filling Preparation

    Prepare the Dutch Apple Filling

    In a bowl, combine sliced apples, brown sugar, cinnamon, lemon juice, and cornstarch. Set aside.

    Prepare the Lemon Meringue Filling

    In a saucepan, combine sugar, water, lemon juice, and cornstarch. Cook until thickened. Whisk egg yolks in a bowl, then slowly add the hot mixture. Return to the saucepan and cook for 2 minutes. Set aside to cool.

    Prepare the Butter Pecan Filling

    Melt butter in a bowl and mix with brown sugar, corn syrup, eggs, and vanilla. Stir in chopped pecans.

    Prepare the Peanut Butter Chocolate Chip Filling

    Mix peanut butter and sugar in a bowl. Add eggs and stir until smooth. Fold in chocolate chips.

    Prepare the Spiced Pumpkin Filling

    In a bowl, mix pumpkin puree, condensed milk, eggs, cinnamon, nutmeg, and ginger until well combined.

Assembly and Baking

    Assemble the Pie Bars

    Preheat oven to 350°F (175°C). Roll out the chilled dough and cut into rectangles. Place the crust in a baking dish and fill with the desired filling (Dutch Apple, Lemon Meringue, Butter Pecan, Peanut Butter Chocolate Chip, or Spiced Pumpkin).

    Bake

    Bake in the preheated oven for 25-30 minutes until the fillings are set and the crust is golden. Allow to cool before slicing.
